Made using the traditional method. Given extra time in contact with lees to add generous complexity to the brightness of the lemon and apple flavours on the palate.

 

"Delicate pale yellow with a green tinge in colour, this is a bright sparkling driven by lemon and pear skin with hints of marzipan and baked French pastry. Drool. Celebrating with someone special?
