A GREAT EXAMPLE OF A FLORAL AND COMPLEX SANCERRE

 

"The White Sancerre is issued from Sauvignon grapes, the only vineyard grape-variety. Cultivated on chalky, chalky-clay and flint soils, the vines are aged about 25 years.

The harvest is making mechanically. After a slow pressing, the big lees are racked and the must is pumped over in tanks for the alcoholic fermentation that lasts 15 to 20 days at low temperature (about 17°C). After maturing between 2 and 7 months on fine fermentation lees so as to avoid any aromas’loss, this wine will be racked and fined with bentonite. After few weeks, the wine will be more racked, filtered then bottling.

Very delicate, this wine develops flowers aromas and is very harmonious in mouth. To taste at about 10- 12°C , it goes perfectly for aperitive and with fish or seafoods without forgetting the famous « Crottin de Chavignol." - Roland Tissier et Fils

 

"A blend of the different soil types found in the appellation, from clay-limestone to flint, the 2020 Tradition is a pretty Sancerre with floral notes and lemon tea. It's an appealing, mellow style with soft flesh through the core. It offers finely balanced acidity, although the alcohol at 14% is sligthly warm, curtailing the length a bit." - Rebecca Gibb, Vinous
