Harvest Method: Entirely by hand
Winemaking: 100% natural since 2001, Organic since 2006, and Biodynamic since 2010.
Vinification, production and ageing are carried out entirely in Recaredo's cellars. All the Xarel lo grapes are fermented in oak barrels. The second fermentation and the ageing in bottle in contact with the "lees" is done exclusively with a natural cork. Cork is sustainable, recyclable and ideal for retaining the original sense of a long-aged Cava. This is a Brut Nature Cava and therefore completely dry and without the addition of sugar. 8 years of contact with the lees. The final clarification is done by hand turning the bottles in the racks. The uncorking process (Disgorgement) is done by hand without freezing the bottleneck: handcrafted professionalism and respect for the environment. It is a Brut Nature Cava, completely dry without addition of sugar. The date of uncorking (Disgorgement) and the months of ageing on the lees are shown on the back label.
