SAVOURY, ELEGANT, MINERAL AND COMPLEX CABERNET FRANC FROM THE GRAVELLY, LIMESTONE SOILS OF BOURGEUIL IN LOIRA VALLEY
 

"A deep red color, a nose combining aromas of leather and black fruits, and a mouth with a silky texture, gently tannic. A classic accompaniment to charcuterie and paté, this wine would also work beautifully with dishes that include wild mushrooms, and aubergine.

 

The house style dictates natural vinifications with native yeasts and miniscule doses of sulfur—only one-third of what is permitted in organic winemaking. The grapes are de-stemmed, macerated from two to four weeks, put into tanks to finish alcoholic fermentation, and then are racked into three- to five-year oak barrels to age for 12 months in limestone caves. They are then transferred for 6 additional months of aging in cuve tank. A light filtration makes it possible to reduce the use of sulfur and avoid fining completely.
