[SOLD-OUT] Out of Step Willowlake Pinot Noir 2017

"The Willowlake vineyard was planted in 1988 and sits at 300 metres above sea level. It’s plenty interesting. It’s sour and spicy, smoky and autumnal well before it’s fruity. It ricochets its way along the palate, sourness sparking as it goes. It’s dry, tannnic, savoury; it’s complex. There’s a slight cloudiness to the wine’s appearance, or at least a suggestion of cloudiness anyway. Not a bad thing. It’s a very dry, uncompromised wine. It should develop very well."

"As most would already be aware 2017 was a remarkable year. Ideal conditions for flowering / fruit set & good rain in spring followed by a mild summer with little to no disease pressure. A warm autumn ensured full ripeness & resulted in complex & intensely flavoured wines at low alcohols with remarkable natural acidity. And when your mantra is to avoid “manipulations” & show the vineyard & the season in the final bottle, well, a vintage like that is a gift.


 

Hand picked. 20% wholebunch & 80% destemmed. Wild fermented in separate open pots. The destemmed portion was gently plunged on a daily basis whilst the wholebunch was sealed up for 3 days before being foot stomped & then plunged. Destemmed fruit was pressed after 10 days & wholebunch after 2 weeks, to one new & six old French oak hogsheads. Racked in winter & then again prior to bottling in September. The wine is unfined, unfiltered & has no adds other than low level sulphur dioxide post-malo & pre-bottling. 225 Dozen made."
