"Hand picked from a single vineyard in Karridale (south). Whole-bunch pressed to old oak for 11 months after ferment, with occasional stirring of lees for texture. Minimally fined and filtered, followed by 15 months in glass prior to release. The palate has a fine textural creaminess that massages the flavour into the mouth rather than asserting it. The characters of salted jalapeño, snow pea and cassis fold seamlessly into the saline acid line. An incredibly elegant and seamless wine – the attention to detail is evident. "Punchy guava with white flesh nectarine, and a hint of passionfruit pulp lift from the glass. There is an underlying lime zest note that helps to support these exotic characters. Citrus and subtle creamy elements help to complex the wine. This is a multi-layered, and engaging nose. Palate: Ripe nectarines, guava, some flinty highlights, with a lime zest finish. The palate has wonderful textures, while retaining a juiciness of fruit and lightness. There is great intensity of fruit, and fantastic length of flavour. The wine finished with a chalky mineral acidity, but subtle fruit flavours linger with this cleansing finale. The length of palate is the real key here - this is a Sauvignon Blanc that can be ruminated upon, but also just enjoyed." - Flowstone
