[SOLD-OUT] Domaine Saint Etienne Rose 2015

Côteaux du Quercy AOC in Le Cuquel, between Bordeaux & Toulouse. Made from Cabernet Franc (70% and Gamay (30%) from sustainably farmed 40 year old vines. Simple guyot pruning. Pruning with the moon, “old moon” for the strong vines, “new moon” for the old vines. A grassy cover crop is left every second row to reduce vigour of the vines by competition and allow lower yield. This also limits erosion on the slopes helps the roots go deeper in the subsoil. The vineyard is worked by subsoiling, aerating the earth and allowing microorganisms to develop freely. Use of Organic fertilizer. Bleeding method (saigné), gentle crushing with free run juice according to colour in the 24 first hours. Cold fermentation at 17 C in thermo-regulated stainless steel vats to preserve and reveal the delicate aromas of lychee, peach, raspberry from the Cabernet Franc and Gamay grapes. Tasting notes: Dry rosé, lovely generous pink colour, revealing notes of stone fruit, raspberry and strawberry. Savoury and fresh, this rosé is delicious on it’s own or versatile with food. Food match: Perfect as an aperitif, or with charcuterie, poultry and even spicy dishes.
