"Domaine Christian Salmon is a family owned estate in the Coteaux Buetons, covering 15 hectares within the appellation of Sancerre Blanc and 3.25 hectares for Pouilly Fume. For six generations the Salmon family has been growing grapes and making wine with care, finesse and passion. The wines are in a classic, fresh and zesty style reliant on indigenous ferments, a very slow and gentle crush and extended time on lees in tank. Grapes grown on the clay-limestone slopes of Bué.
Brilliant very pale straw colour with a light greenish tinge around the edges and watery hue. The nose offers up scents of lime, green apple and passionfruit as top notes followed by some citrus. The palate possesses flavours of lime and green apple followed by a touch of grassiness finishing dry with some mineral and dried herb infusions on the back palate. Aftertaste of dried herbs, lime, green apple and mineral." - Christian Salmon
